Every bag of The 89 Coffee starts its story in Ecuador and is roasted fresh in the USA. But the final chapter? That’s written by you — with water, time, and care. Because how you brew your coffee makes all the difference.
We get it — life is busy. Sometimes, you just need a cup that gets the job done. But when you have high-quality beans in your hands, like ours, it’s worth taking a little extra time to brew it right.
Let’s start with the grind.
Grind size is more than a setting — it’s a key ingredient. Using a French press? Go coarse. Drip machine? Medium works great. Pour-over or AeroPress? Aim for something finer. If your coffee tastes bitter, try grinding coarser. If it’s flat or sour, go finer. It’s a small change that can unlock big flavor.
Then there’s water — the unsung hero.
Use fresh, filtered water if you can. The ideal temperature is between 195–205°F (90–96°C). If you’re boiling water, wait 30 seconds after it reaches a boil before pouring. Too hot, and you’ll burn the grounds. Too cold, and it won’t extract the full flavor.
And don’t forget the golden ratio.
A general rule: use 1 to 2 tablespoons of coffee per 6 ounces of water. But don’t be afraid to experiment. Coffee is personal — what matters is what tastes right to you.
Finally, slow down.
Great coffee deserves your attention. Smell the aroma as it brews. Notice the bloom. Sip slowly. These are the small rituals that turn a cup into an experience.
Whether you’re brewing our dark roast for a bold wake-up or our light roast for a smooth all-day companion, the magic is in your hands.
Because with The 89 Coffee, it’s not just about caffeine — it’s about craft.
